Banana Nut Bread

Description This is a quick, sweet cake-like bread using yellow bananas, nuts and coconuts.

2 cups flour
3/4 cup sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cp toasted, chopped Nuts
1/2 cup toasted coconut
3 very ripe bananas, mashed
1/4 cup plain yogurt
2 large eggs, lightly beaten
6 tablespoons melted butter
1 teaspoon vanilla
Methods/steps

Pre-heat oven to 350.  Grease bottom of loaf pan (or grease and flour bottom and sides of non-stick loaf pan).

Mix first six ingredients.  Mix bananas, yogurt, eggs, butter, and vanilla.
Fold dry mixture into banana mixture until just mixed.

Scrape into pan.  Bake 55 minutes
