Quiche Lorraine
Description
In French cuisine, a quiche is a baked dish that is made primarily of eggs and milk or cream in a pastry crust. Other ingredients such as cooked chopped meat, vegetables, or cheese are often added to the egg mixture before the quiche is baked. Quiche Lorraine is perhaps the most common variety. In addition to the eggs and cream, it includes bacon and cheese.

1 Pie Crust
12 slices of bacon, fried, drained and crumbled
1 1/2 c Swiss cheese, Grated

Methods/steps
Heat the oven to 400F. Prepare the pie shell, sprinkle half of theSwiss cheese in the shell then crumble the fried bacon over the cheese. Sprinkle remaining cheese evenly over the bacon. Mix together egg mixture until well-blended and pour slowly over the bacon and cheese, taking care not to create bare spots. Cover pie crust edges with a thin strip of foil and bake quiche at 400F for 15 minutes. Reduce heat to 350F and bake for 20 minutes more. Remove foil covering and bake 10 minutes more. Serve like pie. Yields: 1 9-inch pie
Additional Tips
Try adding spinach, which is high in iron, to add more color and flavor.
