Radish and Chive Sandwiches with Ginger and Sesame

Description These delicious sandwiches make a great snack or finger food.  As a caterer, I have served these at many parties and always receive rave reviews.  These have a wonderful modern flavor, extracted from such a classic dish.

1/2 cup (1 stick) butter, room temperature
6 tablespoons minced chives, divided
2 tablespoon toasted sesame seeds
1-1/2 teaspoon grated  fresh ginger
1 teaspoon Asian sesame oil
32 1/4-inch-thick baguette slices (or other bread of choice)
20 radishes, thinly sliced
Sea Salt (optional)*
Methods/steps
Mix butter, 3 tablespoons chives, sesame seeds, ginger, and oil in bowl; season with salt and pepper. Spread butter mixture over each bread slice. Top with radishes, overlapping slightly. Sprinkle with remaining chives and sea salt, if desired.
Additional Tips

Tip:  Wait to top with sea salt until just before they are served (the salt makes the radishes sweat). 

 Serving Suggestion:  Mix both black and white sesame seeds to make the appearance more interesting.
